Spinach and Corn (and Paneer) Nu Shaak

I was looking for a new shaak to serve up with Vaal ni Daal...something with spinach because I had a ton of it at home that I had to finish. 


Time: 20 minutes, Serves: 4, Calories/Serving: 108

Ingredients

  • 4 cups spinach, chopped 
  • 1 1/2 onion, chopped 
  • ginger-chilli Paste (adu marcha)
  • 2 cups tomatoes, chopped 
  • 1 cup corn
  • 1/2 tsp turmeric powder (harder)
  • 1 tsp chilli powder (lal marchu)
  • 2 tsp cumin coriander powder (dhana jeeru)
  • 2 tsp garam masala
  • 1/4 tsp mango powder (amchur)
  • 1/4 tsp cardamom powder (elaichi powder) 
  • 1/2 tsp cumin seeds 
  • 1 Bay leaf
  • 3 tsp Oil 
  • Salt to taste
Procedure

  1. Heat 2 tsp of oil in a pan. Add onion and salt. Cook onions until they turn golden brown
  2. Add adu marcha and tomatoes. Cook until tomatoes release water
  3. Add spinach and cook for a few minutes
  4. Let this mixture cool and then grind coarsely
  5. Heat 1 tsp of oil in a pan, add cumin seeds and bay leaves
  6. Add corn and sautee for a few mintues
  7. Add turmeric powder, chilli powder, cumin-corriander powder, amchur powder (if you don't have amchur powder, add a bit of lemon juice), garam masala, salt and spinach mixture. Cover and cook on low heat for about 15 minutes
  8. Add cardamom powder and remove from heat
Serve hot with rotli and/or rice

Alternatively, as a less healthy but more yummy option, you can make Spinach, Corn and Paneer Shaak! Instead of adding 1 cup of corn, add 1/2 cup of corn and 1/2 cup of small bits of fried paneer. Here is the nutritional info for this shaak:
