Jalapeno Cheese Bread

Superbowl food! Delicious jalapeno cheese bread served with butter or spinach cheese dip...yummy...I like my bread loaded with jalapeno and cheese....not really going for healthy =P
Prep Time: about 3 hours, Bake Time: 45 minutes, Serves: 20, Calories/Serving: 140, the whole loaf is 2814 calories

Ingredient

  • 2 tbsp dry yeast
  • 2 tsp sugar
  • 1/3 cup warm water
  • 4 cups flour
  • 3 tbsp butter, unsalted
  • salt to taste (about 1tsp)
  • about 1 cup ice water
  • 1/2 cup jalapeno, sliced
  • 5 oz extra sharp cheddar cheese, 1cm cubed
Procedure

  1. Stir yeast and sugar into warm water and let it sit for about 10 minutes until it rises. 
  2. In a food processor, use the dough blade to process flour, butter and salt (keep in mind that cheese contains salt so don't add too much) for about 30 seconds. If you don't have a food processor, hand mix these ingredients until well mixed.
  3. Add yeast mixture into the dough and mix well
  4. Slowly add ice water to make a soft dough. You may not need a whole cup. In the food processor, add water until dough cleans inside of work bowl and forms a ball. Kneed the dough for about a minute.
  5. Shape the dough in a ball and place in a lightly floured plastic bag. Remove as much air as possible and knot at the top, allowing space for dough to rise.
  6. Let rise in a warm place until dough rises for about 1 to 1 1/2 hours. Dough should have almost doubled
  7. Punch down the dough and mix in the sliced jalapeno and cubbed cheddar cheese
  8. Form a ball cover with oiled plastic wrap and let it rise in warm place for 45 minutes. If you're going to bake in a standard bread pan, put the dough in the pan and let it rise in there (you'll probably get a huge loaf).I bake mine on a warmed pizza stone so to get a dome like shape
  9. Bake in the middle rack at 375F for about 45 minutes until the top is golden brown. 
  10. Allow to cool and cut into pieces (I cut into about 40 pieces to serve with dip)
White Bread
serves: 20
  • To make regular bread use the same ingredients and methods as above but just leave out the jalapeno and cheese. I bake this in a bread pan.
Wheat bread
  • To make wheat bread replace 1/2 of the white flour with and equal amount of whole wheat flour. If you use only wheat flour the loaf will turn out like a brick. I bake this in a bread pan
