Tomatillo Sauce

Here's an easy, fresh and delicious tomatillo sauce. Goes great with enchiladas...I like to make enchilladas stuffed with avocado, mushroom, black beans, cooked quinoa, mozzarella and this sauce.




Time: 20 minutes, Serves: 4, Calories/Serving: 60


Ingredients
  • 1 pound tomatillos
  • 3-4 cloves garlic
  • 1 small whiteonion
  • 1 jalapeno (or to taste)
  • 2 tsp oil
  • salt to taste
  • fresh cilantro
Procedure
  1. Remove the husks from tomatillos, wash and simmer them in some water for about 10 minutes until cooked 
  2. Drain away the water
  3. Blend together tomatillos, garlic, onion, jalapeno, cilantro and salt in about 1 cup of water
  4. Simmer for about 5-10 minutes
Use as enchillada sauce or as a salsa to go with nacho chips.
You can freeze this sauce between tomatillo seasons
