Suva - Bhaji nu Shaak

Ingredients
  • 1 bunch dill (sura) - chopped
  • 2 bunches spinach (bhaji) - chopped
  • 1 tsp lemon juice
  • Adu marchu
  • Salt to taste
  • 1 tsp sugar
  • Vaghar
  • 1 tsp cumin seeds
  • ½  tbsp oil
Procedure
  1. Prepare vaghar on high heat - heat oil, then add cumin seeds
  2. Reduce heat and add chopped dill and chopped spinach
  3. Add lemon juice, adu marchu, very little salt (Initially, it will look like there’s a lot of shaak, but as it cooks, it will greatly reduce in volume.  Add very little salt so that it doesn’t end up becoming salty)
  4. Cook on low heat for about 5-7 minutes, adjust salt and add sugar
  5. Goes well with Rotli and Corn Rotlas
